One of my favorites dinners and good morning workout

Last night, the wife made one of my favorite dinners.  Baked chicken with french fries and baked apples.
Yum! 
Now you wouldn't think from looking at this that it would be low in fat but it really is!  The french fries are potatoes baked with a seasoning in the oven and from an old Susan Powder recipe book.  Anyone remember her?  She was that crazy skinny blond with really short hair with all kinds of energy?  The baked apples and chicken are from our favorite recipe book, the American Heart Association cookbook.  Ok, so the chicken is larger than a deck of cards but overall a really good dinner for you - plus I did six miles yesterday so I could use the extra calories.

This morning was my cross train day.  I did ten miles on the exercise bike.  While it's boring, it really has helped out my running and my legs are not as fatigued when I'm running.  It also gives me a nice break from running too.  I did the ten miles in 34 minutes 30 seconds so I was going at a pretty good speed.  I also did my weights workout as well to keep tone.

It's really, really cold here now.  We had 5-9 inches of snow yesterday and then it got really cold - right now it's 12 degrees with a feels like temp of minus 13.  Good thing I didn't have to go run in that this morning!  We have a cold week ahead of us as well but back into the 30's by Friday.  It's likely that I might have to actually do a run on the treadmill this week - bummer.  With the snow, the kids got a snow day today so they are very happy!

  2. I love oven-baked fries. Have you tried oven-baked sweet potato fries? They are the bomb!

  3. I do not envy your cold weather. I lived in Holland, MI for four years and basically hibernated for all of it. Good luck!

    It's so cold out! I do not even feel like cleaning off my car to go to the gym to run. I am making today a cross training day; P90X cardioX and P90X legs & back.

    Andrew - I'm not sure about it being around the corner.

    Stephanie - Good idea. I might have to use the treadmill tomorrow - 12 degrees with a wind chill of minus 7. I only need to do 4 miles though. I can make it, right?

  11. Gotta say it - does your wife know you refer to her as 'the wife'? just sayin' :) good job on all that biking - getting cold here too, again, but the storms have gone around us.

  12. Lee - she does NOT. I really do need another name, huh? Been using, the wife, the son, the daughter, etc. Or I could just call her L. No snow for the rest of the week for us but frigid cold - still debating about the treadmill. I'm not even sure my Garmin will work in that cold of weather?

  14. Cold for us is high's only in the 20's. Tonight my hair had frozen popsicles after my track workout. Stay warm!
